South Beach Day 2

South Beach is a good name for a diet.  It’s a constant reminder of swimsuit weather.  That name, however, does not make me any less hungry for something sweet and soft to sink my teeth into.  I didn’t realize how often I just pick up something random to eat.  And now...all those random things are off the list.  And I know I have some spritz cookies left in my Christmas tree jar… And yes, I still have Christmas stuff out.  (The tree is put away though.)

But on the lighter side, I did lose a pound on the first day of dieting.  I do fluctuate 2 to 3 pounds on any given day, but I haven’t seen this number in years.  I think this eating right thing might actually work.  It better work!  Peanuts and sugar-free jello are NOT my idea of snacks.  Day 2 went pretty well, I must say.  My afternoon coffee carried me through to dinner, as always.  And I’m not giving up my creamer.  I will drink Splenda in my coffee, begrudgingly, but I will NOT give up my powdered Coffeemate.  So at least I have one good thing to look forward to each day.

And I made one of my favorite soups for dinner.  It just so happened that by switching out one ingredient, the recipe lined up with the Phase 1 food list for the D.  I call it Pizza Soup.  Southern Living Busy Mom’s Weeknight Favorites named it Italian-Style Beef and Pepperoni Soup.  That terribly long title will not fit in the little box on my magnetic menu pad.  I do not have a page number for ya, because I borrowed the book from a fellow consultant.  But I did find the little linky dinky at myrecipes.com for you.  This is a recipe worth repeating!  Everyone should make it when it’s cold out.

My modifications?  I switched out ground turkey for the ground beef.  It was just as good as before.  And of course, I didn’t pair it with that parmesan toast they recommend.  I also added 1/2 packet of Splenda to each bowl after serving it.  As a rule, I almost always add a small amount of sugar to any tomato dish.  It kind of cuts that bitterness.  Anyway, the soup was out of this world.  And it will give Bill a nice hot meal to eat tomorrow when I can’t be here to cut up veggies.

It’s a good thing we’re doing this together.  I don’t think either one of us would stick to it on our own.  It’s the ultimate buddy system.  We both cracked up laughing tonight when he gave me my late-night snack of 15 peanuts.  I’m sure late-night snacks are absolutely against the rules, but at least it’s not hot chocolate chip cookies!!  I don’t think 15 peanuts will keep me from detoxing from sugar and losing a few pounds.  This might be a good thing when it’s all said and done, but for now, I’m really having to ignore those cravings.  That’s okay, though.  I’ll be ready for South Beach when the warm weather hits.  That is, if I find some motivation to use the exercise ball.

Hollabacks

I had about 50 cashews and chips and guacamole for my late night snack last night.  I’m thinking that that’s not on this diet.  And I wonder why I can’t lose my “last” 10 pounds.  wink

I’m glad to know I’m not the only one eating late-night snacks!!  It’s only Day 4, and I’m ready to throw in the towel.  If I were doing it for me, I’d be toasting myself a bagel right now.  I definitely can’t eat like this long term.  Two weeks feels like an eternity.
